Randall Linebacks are America’s oldest and rarest cattle breed, genetically unchanged since the 17th century. This breed was almost lost to extinction due to the increasing industrialization of the cattle industry. Through meticulous breeding and management, Chapel Hill Farm has created a market value for a breed almost completely lost. Because the Randall Linebacks have not been altered to fit industrial beef standards, their meat is free of heavy intermuscular fat, providing a fine-grained, ruby-red meat with a bright, rich, clean flavor. Each animal is treated with respect, pasture-bred, born, and raised, and are the epitome of "slow food". At Locke Store, we are so excited to be able to share such a special product in our store, as it has limited availability! We love using their Five Spice Sausage alongside roasted veggies over a bowl of polenta, or using their ground beef to make the BEST burger ever!
