Stephen is a master of Grazing-Based Viticulture.
He started a conversion on his family farm from organic farming into a closed-farm ecosystem back in 2004.

The farm's current residents include Katahdin sheep,
Kune Kune pigs, geese, chickens and their ever attendant Maremma guard dogs. Together, they all remove pests and weeds, and enrich the soil that grows some of the most delicious grapes in Oregon.

Here is a preview of the farm and an introduction to the wines.

We will taste all 5 of his available wines; Daisy & Alium Pinot Griss. Juel, Passiflora and Luxuria Pinot Noirs.

We are very excited to have the next vintage here from the Vajra Family of Piemonte Italy
The 2018 Vintage in Barolo was incredible and we will feature three Barolo from their estate as well as a few new offerings to pair with Executive Chef Ellie McMillen's five-Course meal.

Giuseppe Vaira will join us on Thursday evening, Kevin Natoli (GD Vajra US Ambassador) will host us on Friday and Sarah Walsh of Winebow will conclude our trio of dinners on Saturday.

Zotter
Josef Zotter has re-invented chocolate as we know it.
Zotter’s “hand-scooping” method fills a rich shell of dark or milk chocolate with a thick, soft, and silky layer of the most unique and magical fillings from whiskey-infused mousse to polenta and lime white chocolate ganache to pistachio marzipan.
Based in Austria, Zotter has been making chocolates since 1987, but only in the last few years have these decadent confections been available in the US, where they have been a massive hit. Their entire business is Fair Trade certified and is dedicated to environmental stewardship, earning a name as one of the most sustainable companies in Austria. Each delicious chocolate bonbon is encased in gorgeous hand drawn packaging, designed by artist Andreas Gratze, making each chocolate a beautiful piece of art. JCoco
High-quality cacao can transcend our expectations of chocolate. We think of chocolate as its own food group, and Seattle-based jcoco is checking all the boxes - a food celebrated as both delicious and nutritious, and appreciated for its rich layers of flavor and nuance based on terroir, fermentation, and roasting. Incorporating unusual ingredients from all over the world, jcoco's mission is to elevate the way people experience chocolate and turn an everyday indulgence into an opportunity to make a difference. All the cacao used in jcoco's bars is sourced from family farms based in either Quillabamba or Rupa Rupa, Peru. While Peru grows only 2.5% of the world's cacao, six of the ten unique varietals of cacao worldwide are found indigenously. Jcoco's efforts to improve social and environmental issues do not end with sustainable farming however, and 10% of all profits are donated to Americans affected by food insecurity.
Staff favorites include orange blossom espresso (a deliciously creamy take on the european classic pairing of coffee and citrus) and boharat spice - a Middle-Eastern blend of warm spices including clove, peppercorn and cumin which meld beautifully with rich dark chocolate.

Crow & Moss
What initially started in 2019 as a basement DIY project has quickly transformed into a full time job for Mike Davies, who is making some of America's best chocolate in Petoskey, Michigan. Using solely single-origin cacao sourced from four countries, Crow & Moss starts with perfectly tempered chocolate that is amazing in its own right, but the inclusions are the cherry on top here: oat milk & gingersnap cookie, banana cardamom brulee, and vanilla smoke (our favorite) - each bar is harmoniously balanced with that melt-in-your-mouth lusciousness that keeps us going back for one more piece... or five... Also new to our shelves are Crow & Moss' new drinking chocolates - melt into a warm mug of your dairy or non-dairy alternative of choice for a decadent treat!
