Once the largest farm in the entire Penedès region, the Sumarroca family took over in 1999 and remains involved daily in the operations of the estate. The family has a strong commitment to very sustainable farming practices, zero irrigation in the fields, and following strict organic regulations in order to produce the best fruit possible. 95% of Cava is produced in the Penedés area of Catalonia, located just southwest of Barcelona. Gravelly, calcareous soils and sea breezes moderated by the Garraf Mountains allow for the production of elegant, balanced wines with fresh fruit character at this estate. Made in the Champagne method, the estate uses the classic Cava blend: Macabeu, Xarel-lo, and Parellada, with the addition of Chardonnay. These bottles then rest for at least 20 months before disgorgement and release to the market. This bottling has fresh aromas of citrus, minerals and pastry, while the palate offers up fresh, tart citrus and herbs. Since 1890, the Tessari family has been making wine at its La Cappuccina estate at Costalunga di Monteforte d’Alpone, in the Soave DOC to the east of Verona. The property takes its name from a restored 17th century chapel that was annexed to Villa Buri-Tessari where Capuchin friars once worshiped. The Chapel is the property’s most striking architectural feature and is now the company’s logo. On the ninety-four acres of vineyards the vines grow lush amongst black basalt rocks. The estate is now run by the fourth generation: Sisto, Pietro, and Elena. In 1985, the winery established organic farming and is regarded as one of the leading pioneers in organic farming in Italy. Two Birds One Stone Carignan 2022

Although this wine is made with the old grape variety Carignan, the vinification was carried out in a modern style. The grapes are destemmed and crushed. Half of the grapes are processed through modern techniques of thermovinification and maceration. The other half goes through a traditional maceration process. The fermentation works at a controlled temperature to keep the wine's fruity aromas. The aging is carried out in tanks with a small amount of French oak staves to add more complexity and roundness to the blend. On the palate, juicy strawberry, cranberry and pomegranate flavors meet baking spice and dried herbs. Nicely structured, with supple tannins and uplifting acidity. 100% Carignan
