It will reveal its full potential next to dishes such as chicken ala crème, fried schnitzel, French quiche and wonderful salmon tartlets and any kind of risotto will be an ideal match. 100% Chardonnay

Vincent Paris “Selection“2021

Origin: Rhône, France
Retail: $19.95 | Sale: $17.96

Vincent Paris, whose first vintage was 1997, is as shy as his wines are bold. In his early 30's, he has retro sideburns, but not much else about this appellation's established star is "retro". Vincent's uncle is Robert Michel, one of Cornas' finest growers. He made his two first wines with his uncle and then, seeking autonomy, rented facilities for the vinification of his most recent wines. He is in the process of building his own wine making facilities with a courtyard that holds his apricot plantation. Vincent owns eight hectares of vineyards and produces about 2,500 cases per year, of which 1,600 are Cornas. He inherited most of his vines from his grandfather (some of which are 90 years old!) They are located primarily along the southeast facing Cornas slope and a small lot in Saint Joseph. 100% Syrah

Domaine du Grand Bourjassot Gigondas 2019

Origin: Rhône, France
Retail: $31.95 | Sale: $28.76

Domaine du Grand Bourjassot farms 10 acres of vines on the great western slope of Gigondas, which gently undulates from the old fortified village down to the Ouvèze River on the edge of the Plan de Dieu. Bourjassot opened its doors in 1993 when Pierre and Marie-Claude Varenne pulled from the cooperative and began to make their own wine. The domaine’s vines in Gigondas are divided into four parcels: two up slopes in more calcareous soil near the village, and two down slopes in alluvial soils. Notably, there’s a good amount of limestone bedrock in Gigondas in contrast to Châteauneuf on the other side of the plain, which is bereft of that blessed rock (CDP is based on ancient glacial and river wash composed of sand, clay, and gravel). The average age of the vines is in excess of 65 years. The wine is subsequently raised in a tank. No fining, and only a light filtration at bottling. 70% Grenache, 22% Syrah, and 8% Mourvèdre
