With one impossible thing at a time. First of all, with a vineyard to cultivate. The search in the Berici Hills in the south of Vicenza, his homeland, finally begins. The news moves fast, from mouth to mouth, until Simone finds a 60-year-old pergola and a plot of indigenous varieties for rent. The half-abandoned land, surrounded only by woods, sits above Lake Fimon in Arcugnano. Three hectares inhabited by hillside vines, steep and old, eager to tell their story. Restoration work began, aiming to give these vines a voice they've been fighting for all their lives. Hence the name "indomiti", a reflection of the struggle for life of reckless humans, old vines, and disobedient wines.  The second step is the search for a winery, Simone knocks on the door of several wine producers with the hope of being able to share a corner of their space. Year after year, this search continues, for agricultural philosophy thrives on the art of letting go. In the vineyard, the human imprint is only a careful, distant presence. Indomiti wines are free to be themselves, they ferment in a naked way, defying the ordinary, far from chemical and physical interferences that limit their sincerity. This is just the beginning of a story, that of indomiti, which sees in its future a phase of evolution, with its vineyard and winery. This is the dream. To find a piece of land. To put it in order, in the matter, and in the spirit to live in balance. Les Chemins d'Arkose Au pied de Mur 2021

The Les Chemins de l’Arkose domaine is located in the heart of Montpeyroux in the Auvergne region. Yvan Bernard and Audrey Baldassin cultivate 8-hectares of vines on the various beautiful terroirs of Puy-de-Dôme. The soils are clay-limestone, more or less mixed with volcanic ash with basaltic intrusions. In a vineyard area that is very fragmented and therefore difficult to mechanize, they work by hand and with respect for the environment and according to the precepts of organic culture.  A former student of the Beaune wine school in Burgundy, Yvan Bernard settled in the region in 2001 at the age of 22. Not being from a winegrowing family, he had to rent plots of vines from different owners to start him on his path. For twenty years, he converted his domain to organic farming and offered wines under his name. In 2020, Yvan joined forces with Audrey Baldassin who had already been working at the estate for a few years. The estate became Les Chemins de l’Arkose and so the adventure continued. The color is bright gold. The nose is delicate, ripe, with notes of yellow fruits, orange blossom, faded rose and spices. The palate is round, ripe and fresh, with a fleshy , juicy substance with gourmet and spicy fruit. 100% Chardonnay-Muscaté
