Bodegas Ondarre ‘Millennium’ Cava NV

Bodegas Ondarre was founded in 1986 and belongs to the Bodegas Olarra Group, one of the most important names in Rioja. The bodega is located in Viana, a historic town 8 kilometers from Logroño in the heart of the Rioja region, and The name of the bodega pays homage to the family country house dating from 1450. Their goal is to make wines with a clear typical personality reflecting the town of Viana, an identity which is defined by the diversity of the soils and the distribution of the small, old vineyards on the slopes which climb up towards the Sierra de Codés. Virtually since their foundation, Bodegas Ondarre began making cava from the Viura variety, the most representative white wine grape of this zone. In 1940 Maria Otero and Manuel Mendéz founded Casa Penoudos, a small establishment dedicated to hospitality and wine sales. In 1990, their grandchildren created the ViniGalicia, a collection of wineries producing typical wines from Galicia. Overtime, they acquired several wineries throughout Galicia and gained ISF certification. Each of the wines made under the ViniGalicia label is a representation of the land and tradition it comes from. Grapes are selected for perfect ripeness and fermentation is then carried out in stainless steel tanks at a controlled temperature (between 15 and 18º) to preserve the fresh and fruity aromas. Rias Altas is located in the northernmost region of Galicia. Aromas of citrus fruits such as orange peel and hints of stone fruit. 100% Albariño

Malolactic fermentation took place in new oak casks made from Missouri and French wood. The wine then spent 27 months in oak casks with regular racking. After bottling, the wine spent 26 months aging before release. Rioja Gran Reserva red wines must be aged for a minimum of five years before they can be released, with at least two of those years spent in oak barrels and two years in bottles. A complex, solid structure of black fruit, spices and raisin aromas on the nose. On the palate it shows a full body and a high level of concentration, which along with the freshness it shows, should be a clear sign of a long life ahead.
