Castiço wines are made by Cave Central da Bairrada, which is currently run by the 3rd generation of the Matos family and located along the central coast of Portugal. In 2002, Cave Central da Bairrada decided to follow a new path and make a radical change in the production process in order to improve quality and monitor market trends. With the new process, there is no longer carbon dioxide addition to the wines, thus they acquire their own gas, by natural fermentation in closed vats, also known as the “Charmat Method”. These grapes come from an average of 15 year old vines grown in clay and limestone soils and are hand harvested. Floral nose becomes fresh and elegant on the palate. 50% Maria Gomes, 30% Bical, 10% Arinto and 10% Síria
