Chateau Jouclary ‘Cabardes Rosé’ 2021

10 km north of the ancient walled city of Carcassone lies Château Jouclary. Cabernet Franc, Grenache, Cinsault and Syrah are grown on stony terroir marked by both fresh Atlantic sea winds and warm Mediterranen sun. Being true to this geographic partnership, A.O.C. Laws mandate that 40% of the varieties must be “atlantique” and 40% must be “mediterranean”. In this rose, Cabernet Franc and Grenache form the backbone of the wine and old vine Grenache and Syrah provide some ripeness and warmth. Careful blending allows the vigneron to obtain the best possible balance between fruit and structure, softness and complexity, and clarity and elegance. The grapes are harvested early in the morning to avoid oxidation and gently pressed and then fermented at low temperatures. The wine has a pale salmon color and aromatic with scents of red currant and light citrus. Fresh fruit flavors are supported by a good structure and acidity that allows the wine to remain fresh throughout the palate.

Domaine de Saint Ser Rosé 'Cuvée Prestige’ 2021

Sainte-Victoire is a sub-appellation of Côtes de Provence and became officially recognized in 2005 as a DGC. Domaine de Saint-Ser sits at the foot of the Montagne Sainte-Victoire with the highest vineyards in the appellation. The vineyards are south-facing and benefit from the light coming from the mountain of limestone just above it and the chalky-clay soils and eroded stones. Jacqueline Guichot purchased the property in 2006 when it was in need of major renovations and began to restructure the vineyards and repair the buildings. In 2017, Domaine de Saint-Ser was certified as both organic and biodynamic and continues to make wines in a low-intervention style. The first cellar has stainless steel tanks and the second has an array of barrels, foudres, demi-john and eggs. This rose is finished in stainless steel. This lightly peach tinged rose has wonderful aromatics brought forward by the individual grapes involved. Made in the Provencal style, enjoy fresh citrus notes and sparkling red fruit.

Domaine Grosbot-Barbara ‘Brut 0’

The Saint-Pourçain region is better known for oak used in wine barrels than for its wines, despite the region having a vinicultural history dating back to the Phonecians. During the 13th and 14th century the wines are held in high esteem and by the end of the 18th century the vineyards covered more than 8,000 hectares. In 2009, the appellation received A.O.C. Status. Winemaker Denis Barbara farms several parcels of land totalling 8 hectares and has two-thirds of his production is in red wine. Denis first produced a sparkling wine from Gamay in 2010 and he is the only producer in Saint Pourçain to make a méthode traditionelle as a Blanc de Noir. .The fruit is harvested early and the grapes are gently pressed to obtain a Blanc de Noir. The juice is fermented in stainless steel and after the “prise de mousse” rests for 15 months “sur lattes” before disgorgement. The sparkling wine is finished without a dosage. – thus the name Brut 0. The Gamay comes from a single parcel of vines called "Les Ferneaux" which produces a "tranquil" wine that inspired Denis to make this cuvée.
