Treveri Cellars is a family-owned sparkling wine house that produces some of the finest handcrafted sparkling wines in the United States. Sparkling wines are typically made with white wine grapes, which thrive in cooler growing sites where rich acidity and minerality combine to bring a rich drinking experience with the finished product. Head winemaker and owner Juersgen Grieb was born and raised in Trier, Germany where he developed his passion and knowledge for wine, especially sparkling wine. Treveri Cellars farms all of their estate fruit organically, while also providing natural pollination and habitat buffers and implementing regenerative farming practices such as using mobile chicken tractors to keep weeds and pests away from the grapes, while fertilizing the soil. Green apple and a hint of brioche are balanced by bright acid and touch of yeast on the palate for a cool, crisp finish. 100% Chardonnay

Domaine Pillot Pinot Noir 2021

The Pillot Estate boasts six generations of savoir-faire and a passion for winemaking that has been passed on from father to son. Always present in Côte Chalonnaise, the family began working the vines around 150 years ago. With his older brother, Laurent Pillot took over the estate from their father in 1991 and now runs the vineyards with his two sons. Everything is harvested manually as part of the estate’s desire to maintain this traditional method. Maceration is done in concrete vats over 10-12 days. The alcohol ferments naturally. The wine blends meant for bottling are then barrelled and malolactic fermentation takes place in barrels while aging for 12 months. This is the last of the 2021 and one of the best values we have found from Burgundy all year! A ruby red wine, with notes of red berries. The mouth, though elegantly light, offers bursting flavors of red fruit, and a balanced mouthfeel. 100% Pinot Noir

In a region blessed with arguably the world's finest terroir and winemaking traditions, yet beleaguered by intervention-heavy techno-winemaking and a reliance on consultants and historic reputations, Arnauld Cassini joins the small cadre of Bordeaux producers creating a quiet revolution. Unlike many other Bordeaux producers, Cassini doesn’t use any oak in any of his wines and, rather, lets the terroir of Saint-Émilion speak for itself. Cassini calls himself a natural winemaker, not only because of his almost nonexistent sulfur levels, but also because he prides himself on vinifying his wine ‘without artifice’: no oak, no filtering, nothing added. This is a soft-bodied, medium-bodied red wine full of ripe, plummy fruit notes and just the right touch of dusty earth. 100% Merlot

Espaço Rural Bojador Tinto 2021

Espaço Rural, made up of husband and wife duo Pedro Ribeiro and his wife Catarina Vieira, is practicing organic farming with very little irrigation in Alentejo, a region in which most irrigate freely because of the heat and the super-arid conditions. The Bojador wines come from newer vineyards that are about 15 years old, the white varietals planted in mostly granite, while the red varietals are planted in schist. All of their wines are fermented using indigenous yeasts. The name Bojador comes from Cape Bojador, located on the Moroccan coastline. According to legend, medieval Portuguese explorers refused to sail further south due to a large number of lost ships and mythical sea monsters. This red blend was fermented in concrete tanks and matured for six months in french oak barrels. An exuberant aroma of red berries and full-bodied with round tannins. 50% Aragonez, 30% Touriga Nacional, 20% Trincadeira
