Fred Loimer began practicing biodynamic farming in 2006 and is a founding member of Respekt, an association for biodynamic viticulture. This Brut Rosé Reserve is a blend of Zweigelt, Pinot Noir, and Sankt Laurent from biodynamically-farmed vineyards in Langenlois and Gumpoldskirchen. The wine is made in the traditional method using indigenous yeasts and aged for eighteen months on the lees in bottle before disgorgement and finished with a low dosage. A delicate nose of wildflowers, fresh strawberries and bay leaf is framed by gentle spice. On the palate, the wine’s floral character is supported by hints of toasted bread and a supple mouthfeel that is complimented by invigorating acidity.
